Ki No Bi Sei originates from Kyoto Prefecture, Japan's spiritual center of craft distillation, where soft water from the surrounding mountains feeds the production process. The gin is distilled in small batches using a copper pot still, with six Japanese botanicals macerated separately before blending: juniper, yuzu citrus peel, hinoki (Japanese cypress) wood, sansho pepper, ginger, and shiso leaf. This technique—individual botanical steeping rather than co-maceration—allows each element to retain its distinct character. The spirit rests at 47% ABV, bottled without chill-filtration to preserve aromatic complexity. Sei (清, meaning "pure") signals the house style: a gin that prioritizes Japanese terroir botanicals over London Dry convention, with hinoki's resinous, woody minerality anchoring the citrus brightness rather than allowing juniper to dominate. The result drinks dry and structured, with yuzu's tart acidity cutting through the wood spice.
