Abelha (Portuguese for 'bee') was built around a single commitment: organic, single-estate sugarcane grown in the highlands of São João del Rei, Minas Gerais, where the Serra da Mantiqueira foothills deliver cooler nights and red-clay soils that slow cane maturation and concentrate natural sugars without irrigation. The estate's organic certification is not marketing — no synthetic pesticides or fertilisers enter the fermentation chain, which matters because cachaca is distilled from fresh-pressed cane juice, not molasses, meaning every agronomic input is carried directly into the glass.
The Gold expression is rested in Brazilian native hardwood casks — a deliberate departure from the European oak default — imparting a distinctly resinous, tropical-wood character that no French barrique can replicate. Fermentation uses the cane's own ambient microflora, producing a broader ester profile than cultured-yeast spirits. The result sits at 39% ABV, bottled without chill-filtration to preserve the natural oils from the fresh-juice base.
What separates this from most gold cachacas is the combination of certified-organic provenance and indigenous wood aging — two choices that are individually rare and together almost singular in the category.
