When Toshiyuki and Youichi Kiuchi launched craft beer production in 1996, they were working inside a sake brewery their family had operated since 1823 — and that institutional memory of fermentation discipline shapes every beer Hitachino Nest produces. The Espresso Stout is brewed at the Nukada Brewery in Naka City, Ibaraki Prefecture, drawing on medium-soft well water sourced on-site, which softens roast astringency and allows the coffee character to read cleanly rather than harshly. Fermentation takes place in stainless steel tanks at approximately 20°C, a temperature regime borrowed from the brewery's ale production standard, preserving aromatic clarity in a style that can easily tip toward muddy bitterness. Malt is milled on-site; the grain bill centres on heavily roasted malts alongside espresso coffee additions, producing a dense, near-opaque body with a persistent tan head. What separates this expression from European stout peers is the institutional context: a brewer whose parallel production lines include koji-fermented ales and cedar-cask sake-barrel maturation brings a cross-disciplinary precision to roast management that most dedicated beer breweries simply do not possess. As a non-vintage, seasonally consistent release, it drinks best fresh, with roast intensity at its most expressive within 12 months of production.
