When Toshiyuki and Youichi Kiuchi launched craft beer production in 1996, they were working inside a sake brewery founded in 1823 — and that institutional memory of fermentation craft is embedded in every Hitachino Nest expression. The Amber Ale is produced at Nukada Brewery in Naka City, Ibaraki Prefecture, drawing on medium-soft well water sourced on-site, a water profile that keeps hop bitterness rounded and allows caramel malt character to read cleanly without astringency. Ibaraki's historical identity as Japan's primary barley-growing region — responsible for roughly 27% of domestic beer-barley production — gives Kiuchi direct access to local grain supply, and malt is milled on-site before a saccharification rest of approximately 40 minutes. Fermentation proceeds in stainless steel tanks cooled to approximately 20°C before yeast pitching, a controlled approach that preserves the malt-forward aromatic profile rather than generating ester-heavy fermentation byproducts. Unlike the brewery's cedar-aged Japanese Classic Ale or the dual-yeast Red Rice Ale, the Amber Ale applies no sake-derived technique — it is Kiuchi's most direct engagement with the English/American amber tradition, making it the clearest expression of the base brewing craft before hybridization. The result is a toasted-malt-driven beer with toffee depth, restrained bitterness, and the clean finish that medium-soft water consistently delivers.
