In 1724, Rémy Martin — a Charente vintner born near Rouillac — founded a cognac trading house that made one commitment no rival has matched in three centuries: restricting every expression, from entry-level to prestige, exclusively to Grande and Petite Champagne crus. This 300th anniversary edition of the VSOP marks that founding year in a commemorative gift box. The chalky, calcareous subsoil of Fine Champagne retains moisture through dry seasons, preserving acidity in the Ugni Blanc grape and concentrating the aromatic compounds that survive double distillation. Distillation is performed on the lees — residual yeast sediment left in contact with the wine — a house-wide signature that most Cognac producers reserve for premium tiers or skip entirely, adding a deeper aromatic register to the base spirit. The VSOP blend draws on 200–400 individual eaux-de-vie, aged a minimum of four years in French Limousin oak from trees at least 100 years old, seasoned outdoors for 2–3 years before coopering; the large open grain of Limousin oak drives vanilla and spice extraction alongside meaningful oxygen exchange. The blend is approximately 55% Grande Champagne / 45% Petite Champagne, bottled at 40% ABV. What no peer does at this price tier: lees distillation applied as a house standard, not a prestige-tier exception, across a Fine Champagne-only sourcing policy that Rémy Martin pioneered when it created the world's first VSOP Fine Champagne designation in 1927.
