When co-heir Jean-Marc Boillot withdrew his share of the Sauzet vineyards in the early 1990s, the family was forced to rebuild from near-zero — the Grand Cru holdings that exist today, including this parcel of Bienvenues-Bâtard-Montrachet, are the direct result of that reconstruction. Bienvenues-Bâtard-Montrachet sits at the foot of the Montrachet slope on argilo-calcaire soils — clay-and-limestone bedrock that retains moisture while the chalky subsoil drives the mineral tension that separates this Grand Cru from richer, flatter expressions lower on the hill. Hand-harvested Chardonnay is whole-cluster pressed pneumatically, then fermented in French oak casks at 18–20°C using indigenous yeasts — selected yeasts deployed only in difficult vintages, preserving site character in a year like 2014. Grand Cru aging runs at 40–50% new French oak for 12 months in barrel, followed by a further six months on lees in stainless-steel tank — the tank phase is Sauzet's house signature, building textural density without additional oak imprint. Unusually for a producer of this stature, Sauzet operates as a combined estate-and-négociant, unable to label wines 'Domaine' — a legal consequence of the 1991 split that the house has turned into a quality tool. The 2014 vintage delivered cool-season precision: high natural acidity, taut structure, and a long aging arc that is only now entering its most expressive phase.
