Founded in 1870 and now designated an Impresa Storica d'Italia, Apollonio has aged approximately one million litres per year in oak across four generations — a deliberate house commitment that sets it apart from Puglian peers who pivoted to stainless steel for varietal freshness. The Mani del Sud Salice Salentino Rosso is the direct expression of that philosophy at its most accessible tier.

The fruit originates from the Valle della Cupa around Monteroni di Lecce, roughly 5 km from Lecce at approximately 100 m elevation. Calcareous soils laced with clay — classic Salento karst geology — stress the vines into concentrated berry production, while dual sea breezes from the Adriatic and Ionian coasts moderate the intense Mediterranean sun and impart a saline mineral thread through the wine.

The blend is 80% Negroamaro and 20% Malvasia Nera, harvested manually in the third decade of September. Fermentation proceeds at 27–28 °C in large Slavonian oak vats with floating-cap management and pump-overs; skin maceration extracts polyphenolic structure before the wine moves to large Slavonian oak barrels for 3–12 months. Malvasia Nera's aromatic lift — dried rose, anise — threads through Negroamaro's dark-fruit density without softening its characteristic bitter-cherry grip.

The Malvasia Nera component is the category transgression: most Salice Salentino producers blend Negroamaro with Montepulciano for structure, but Apollonio's aromatic co-ferment produces a distinctly perfumed, spice-forward profile unique within the DOC. Drink now through three to five years for primary fruit intensity, or cellar briefly for the oak integration to fully resolve.
