−19%Founded in 1870 and now designated an Impresa Storica d'Italia, Apollonio has spent four generations resisting the Puglian industry's pivot toward stainless-steel freshness — aging approximately one million litres per year in oak as a deliberate house doctrine. The Terragnolo draws its Negroamaro from the flat-to-karst-depressed terrain of the Valle della Cupa near Monteroni di Lecce, roughly 100 m above sea level, where calcareous soils laced with clay slow water uptake and concentrate phenolics, while dual sea breezes from the Adriatic and Ionian coasts temper the intense Mediterranean sun and preserve natural acidity. Grapes are harvested manually in late September, destemmed, and fermented at 27–28 °C in large Slavonian oak vats with floating-cap management and pump-overs; skin maceration extends to build polyphenolic structure before the wine moves to Slavonian oak barrels for entry-level aging. What distinguishes Terragnolo within Apollonio's range is its focus on Negroamaro as a near-varietal expression — the grape's characteristic bitter-cherry skin and tobacco-earth register left largely unmasked by new oak. The current vintage delivers the dark fruit density and Mediterranean herb character typical of Salento's sun-saturated growing season, approachable now yet structured for 3–5 years of further development.
