While Max Schubert was building Grange on new American oak hogsheads in the 1950s, St Henri took the opposite path — matured entirely in large old oak vats, a deliberate refusal of new-oak influence that has defined this wine across every vintage since its inception. The result is a Shiraz whose structure comes from fruit and time, not timber. Sourced from Penfolds' multi-regional South Australian network — anchored by Barossa Valley fruit grown in ancient, deep alluvial and sandy loam soils on phylloxera-free rootstock, including parcels from the 290-hectare Kalimna property — the warm valley floor delivers concentrated dark fruit, while cooler-climate contributions from McLaren Vale and beyond add tension to the mid-palate. Fermentation follows Penfolds' house protocol using acclimatised pure yeast cultures in temperature-controlled stainless steel fermenters, with basket pressing preserving textural integrity. The wine then enters large old oak vats — no new oak at any stage — allowing slow, oxidative development without the vanilla or coconut signatures that mark the Bin range. This is the one expression in the Penfolds red portfolio where the winemaker's hand is most deliberately hidden: no new-oak scaffolding, no Grange-level extraction, just multi-regional fruit resolved over time. The 2020 South Australian growing season delivered warm, even ripening with good diurnal range; expect the characteristic St Henri profile of dark plum, ironstone minerality, and dried herb complexity, with a drinking window extending well into the 2030s.
