Falernum is one of the oldest flavouring traditions in Caribbean bartending, historically a sweetened syrup or low-ABV liqueur built on lime zest, almond, ginger, and warm spices such as clove and allspice. Monin, founded in Bourges, France in 1912 and now the world's largest flavoured syrup producer, translates that tradition into a shelf-stable, alcohol-free concentrate designed for consistent replication across high-volume bar programmes.
This expression is produced via cold maceration and blending of natural flavour extracts — lime, almond (orgeat-adjacent), ginger, and clove — suspended in a sugar-syrup base, without fermentation or distillation. The result is a non-alcoholic syrup rather than a liqueur, distinguishing it from Velvet Falernum (11% ABV) and John D. Taylor's original. That distinction makes it the only falernum format usable in zero-proof builds without diluting alcohol content in spirit-forward cocktails. Monin's standardised Brix level ensures batch-to-batch sweetness consistency, a deliberate industrial choice prioritising reproducibility over artisan variation.
