The craft Nathan 'Nearest' Green — the distillery's first Master Distiller, an enslaved man whose technique was largely erased from official histories until the 2010s — passed to Jack Daniel is still executed at Cave Spring Hollow, Lynchburg, where a limestone cave spring delivers iron-free water at a constant 56°F year-round. Iron removal is not cosmetic: iron compounds actively degrade whiskey flavor, and the calcium-magnesium profile of this specific spring is inseparable from the house character.
Before any barrel contact, new-make spirit distilled to 140 proof on a 100-foot copper column still is gravity-fed drop-by-drop through 10-foot vats of handmade sugar maple charcoal over 3–5 days — the Lincoln County Process, legally codified under Tennessee HB 1084 (2013), that separates this from bourbon by a single deliberate step. The 80% corn / 12% malted barley / 8% rye mash bill ferments in open-top cypress vats using a sour mash backset for pH control, then enters 100% new charred American white oak at 125 proof. Old No. 7 is mingled from 175–200 barrels drawn across multiple rickhouse floors — upper floors for wood intensity, lower floors for slower integration — before bottling at 40% ABV, chill-filtered.
The special feature: Jack Daniel's meets every federal legal definition of straight bourbon yet deliberately refuses the label — the only major American whiskey to legally qualify as bourbon and categorically reject the designation. This 3-litre format delivers the identical blend in a format scaled for extended service or display.
