This Junmai Nigori retains suspended rice solids (nigori) — a deliberate choice that shifts the textural and flavor profile away from the polished clarity typical of premium sake.
Production specifics: Brewed from Niigata-grown rice polished to junmai standards (≤70% remaining grain), the sake undergoes standard koji fermentation before coarse filtration that intentionally preserves lees and rice particles. This unfiltered state creates the characteristic cloudy appearance and adds starch-derived sweetness and body that filtered versions lack. The result is creamy mouthfeel with subtle rice-cake aromatics — a textural anchor rarely found in refined sake categories.
Special feature: Nigori sake occupies a paradox in Japanese brewing tradition — technically less refined than ginjo or daiginjo, yet requires precise control to avoid spoilage. Hirotogawa's version balances this by maintaining Niigata's signature mineral spine despite the added richness of suspended solids.
