Founded in 1865 on the northwestern tip of Tottori Prefecture, Chiyomusubi built its identity around Gōriki — a Tottori-exclusive rice variety that had nearly vanished by the mid-1950s and was revived through a 1998 collaboration between the brewery, contract farmers, and Tottori University. Sorah channels that same terroir commitment into sparkling form. The brewery sits in Sakaiminato City on the Sea of Japan coast, where the maritime microclimate and the slightly soft spring water drawn daily by hand from the remote Chugoku Mountains in Daito Town, Shimane Prefecture — a three-hour round trip each brewing day — define the mineral texture and clean fermentation character of every expression. Low-temperature, carefully controlled fermentation is standard practice here; steamed rice is hand-cooled to ensure uniform core temperature, and the brewery maintains a proprietary yeast collection, selecting and preserving top-performing strains annually. What makes Sorah unusual within the sparkling sake category is its grounding in a single-prefecture heritage rice program operating under strict seed-purity rules — this is not a neutral base wine carbonated for accessibility, but a site-specific expression of Gōriki's characteristically full body and gentle aromatic register, rendered effervescent. As a non-vintage expression, Sorah is built for freshness; drink young to preserve the lively carbonation and the Gōriki-driven texture that distinguishes it from lighter, Niigata-style sparkling sakes.
