When Lotte Chilsung launched Chum Churum in 2006, the deliberate choice to build the entire product around alkaline bedrock water drawn from the Daegwallyeong Pass in the Taebaek mountain range of Gangwon-do was a category-defining transgression — no rival soju had ever made water chemistry its primary point of difference. That water, constituting approximately 80% of the finished product, is processed through electrolysis to strip impurities before alkalization, yielding fine mineral-rich particles that bind tightly with the alcohol for a throat-soothing texture that bamboo-charcoal filtration alone cannot replicate.

The base spirit is produced via continuous column distillation of a multi-grain and tapioca mash (rice, tapioca, barley, and wheat), with multiple passes to remove harsh congeners. The resulting high-proof neutral spirit is diluted immediately — no wood aging — to a low ABV, then blended with xylitol, alanine, asparagine, and allulose, functional additives that deliver clean sweetness and amino-acid-based hangover mitigation. The Blueberry expression layers fruit flavouring over this alkaline-water base, a departure from the unflavoured Original.

What no peer does: Chum Churum pioneered the 'Shake Campaign' — a brand-endorsed ritual of shaking the bottle before pouring to further integrate the alkaline water and alcohol, turning a production philosophy into a consumer gesture. As a flavoured, non-aged diluted soju (heukju) catalogued under Sake/Shochu for retail convenience, this 360 ml format is NV by nature and designed for immediate consumption.
