Hakutake Kumamon represents a regional expression of Japan's umeshu tradition, sourced from Kumamoto Prefecture in Kyushu, where plum cultivation and spirit-making converge. The wine draws from local Ume plums macerated whole in a shochu base, allowing extended contact between fruit flesh, pit, and spirit to develop layered stone-fruit character. Production follows classical umeshu methodology: whole fruit selection, controlled maceration duration, and natural sugar extraction from the plums themselves, resulting in a semi-sweet profile without added sugars. The Kumamon designation anchors the expression to Kumamoto's terroir and plum-growing heritage. Drinking window: immediate through 3 years, served chilled or over ice to amplify fruit clarity.
