Kitaoka Honten was formalised as a sake-only brewery in 1868 (Meiji year 1) by the seventh-generation Kitaoka head, consolidating a family commercial lineage in Yoshino-cho, Nara, stretching back roughly 400 years. That same commitment to capturing Yoshino's botanical character — most visible in the brewery's cherry-blossom-infused liqueurs — extends here into a fruit-forward cocktail base built around kiwi. The brewery draws its water from Oku-Yoshino Forest Water (奥吉野の森林水), mountain-stream water characterised by low iron content and a soft mineral profile, the same source that underpins the delicacy of the Yatagarasu sake range. The Kiwi Sour base employs Kitaoka Honten's botanical infusion method — the same technique used across the fruit and flower liqueur line — delivering the tart, green-fleshed character of kiwi balanced against a sugar-syrup sweetness calibrated for direct mixing. The 1.8 L format (いっしょう瓶) is the defining transgression here: while most premium Japanese liqueurs are bottled at 500–720 mL for retail gifting, this large-format bottling is explicitly positioned as a professional cocktail base, signalling bar-programme and high-volume home use rather than sipping. As an NV expression, consistency across batches is the production priority rather than vintage variation.
