This expression centers on Jamaican allspice berries (pimento), macerated and distilled into a neutral grain base, then finished to 40% ABV. The liqueur balances the warm, clove-forward spice of allspice with a deliberate bitter backbone—characteristic of the house's philosophy that bitterness is a flavor dimension, not a flaw.
