Founded in 1892 in Saku City, Sakunohana Shuzo sits at roughly 700 m elevation on the Saku-daira plateau, a high-altitude inland basin flanked by Mt. Asama to the north and the Yatsugatake range to the south — a geography that delivers the sustained cold temperatures essential to slow, controlled fermentation. The brewery draws on the regional snowmelt-fed groundwater characteristic of the Chikuma River corridor, where local rice paddies have supplied sake brewers since the Edo period.
This Junmai is built entirely from Hitogokochi rice — Nagano's own sake variety — with no added distilled alcohol, expressing the grain without dilution or correction. The designation Kumamoto Kobo identifies the yeast: Kumamoto yeast (Kyokai No. 9), originally developed at the Kumamoto Prefectural Brewery and prized for producing clean, fruity ginjo-type aromatics even in Junmai-grade fermentations — an unusual choice that lifts the aromatic register well above what the polish ratio alone would suggest. Toji Tatsuyuki Inoue applies ginjo-zukuri slow low-temperature fermentation as standard practice across the lineup.
The 1.8 L magnum format makes this the most economical entry into Sakunohana's terroir-driven house style. The Saku-daira cool climate imparts a dry, clean finish with lively acidity that keeps the medium body from feeling heavy.
